Dinner of Chance

Tonight is a night when I enjoy a glass of wine along with my meal.  Who am I kidding, I have a glass every night with my meal.  I have the wine chosen, poured, and ready to enjoy; only problem is I haven't figured out just yet what to make.  I do what any person would and rummage through the pantry.  Only to find that there is NOTHING to eat.  What did I think I would eat? 

This is where a creative mind, and a joy for cooking comes in.  First, I start off by roasting some veggies I have in the crisper; squash, tomatoes, onion, potato, garlic, and onion.  Turns out to smell so yummy, so then I check to see if I have any vegetable or chicken stock.  Yes, you guessed it, I didn't have either.  Next, I check to see if I have any bouillon, and I'm humbled at the fact that I do.  (For those of you that don't know what that is; it's a cube of seasoning to make your own flavor of stock.)  After, the stock is made I then put my veggies in the pot.  I get out my handy little hand held blender, and TaDa; yummy vegetable soup.  

I once had a soup very similar to this when I was in Paris a few years back.  Not only was it tasty, but I was able to go down memory lane while I ate my dinner.  

Advice of the Day:  When you realize there isn't anything to eat; use your imagination (if you have one; not everyone does when it comes to cooking), something delicious is right around the way.
