End of Summer Saute














Garbanzo Bean & Asparagus Saute

Ingredients:
1       Clove Garlic, minced
1/2   Yellow onion
1/4   Cup vegetable broth
1       Can Garbanzo Beans
1       Bunch Asparagus, chopped into 1" pieces
1       Zucchini, Chopped 
10    Cherry Tomatoes, halved
2      Tbsp Sweet Paprika
1      Tsp Dried Parsley
        Salt & Pepper to taste
1      Tbsp EVOO

Directions:
1.   Drizzle EVOO on the bottom of a sauce pan.  Throw in onion & garlic and saute until they are just slightly colored.  You'll be able to smell the richness of them to tell when their ready.

2.  Add Garbanzo beans, Asparagus, and Zucchini; along with your vegetable broth.  Salt & Pepper.  Cook on medium heat for 5 min.  

3.  Add your Sweet Paprika and Parsley, continue to cook until cooked through the way you like.  I tend to keep my Asparagus a little crisp.  

This recipe is super easy to make, and is sure to make the family happy.  I guarantee to all the vegetable lovers out there that this will be a home run recipe to whatever you pair it up with.  It is the perfect end of summer side dish. Enjoy!
